I could eat banana bread all day, errday.

I try to not do that, but every once in a while I'll whip up my favorite recipe of all time. I shared this on the blog ages ago but the photos were terrible, so I thought I'd do something different today and share this amazing recipe with you all.

This recipe is a variation from the Skinnytaste blog, which I love! I basically learned how to cook with her blog, and it's amazing for beginners and if you want to eat healthier, but still yummy food. I made the bread so many times and changing something every time, so now I have what I like to think is the perfect recipe.

Let's see how you can make this yummy bread...

Ingredients
  • 6-8 very ripe bananas (number depends on size)
  • 2 1/2 cups flour (I usually do half wholewheat, half spelt)
  • 1 teaspoon of baking soda/baking powder
  • 2 tablespoons butter
  • 1 cup brown sugar
  • 2 whole eggs
  • 1 packet of vanilla sugar
  • optional: frozen fruit, Nutella, peanut butter, applesauce, nuts
Instructions

Preheat your oven to 175 degrees Celsius. Oil a bread baking pan thoroughly (can also use butter).

Mash the bananas with a fork. This is a great way to use those blackened bananas you were gonna throw away! Add eggs, then all of the dry ingredients and mix with an electric mixer on low speed until there are no lumps.

Optional: For the toppings, keep in mind the consistency of the bread. It shouldn't be too runny or it won't bake through. The applesauce will make it moister, but add just a little bit! With peanut butter, add it on top and use a fork to spread it inside the batter when it's already in the pan. If you're using frozen fruit, roll it in flour so the color doesn't leak through the batter (trust me, I made my mistake with blueberries and had to eat blue banana bread).

Pour the batter into your pan and bake for about an hour. If you see it getting too crispy on top, turn down the temperature. To check if it's done, insert a fork and see when it comes out clean.
